Decadent Dessert Cups

Delicious single serving dessert cups that you can flavor to suit your tastes. Serving size 12

Basic Recipe

Cup Base:

chopped almonds

1 TB unsweetened cocoa powder

1/4 c splenda

1 tsp instant coffee

1 TB butter

8 oz cream cheese

1 whole egg

2 TB cocoa

1/4 tsp instant coffee

2 TB cream

1 cup splenda

pinch salt

1 tsp vanilla

Chop almonds finely in food processor. Add cocoa powder, splenda and instant coffee. Preheat oven to 325 . Melt butter in microwave. Coat each of your individual cups with butter and evenly spread the nut mixture on the bottom.

Blend together cream cheese, egg, cocoa, instant coffee, cream, splenda salt and vanilla. Spoon this mixture evenly in the 12 cups.

Place is a large baking pan with just enough water to cover the bottom of the pan. Bake for 15 minutes. Remove from oven and remove from baking dish as soon as you can handle to prevent further cooking. Set cups aside to cool.

1 pkg knox unflavored gelatin

1 ¨ö cups boiling water

24 oz. Cream cheese

1 ¨ö cup splenda

pinch salt

1 tsp vanilla

Flavor extracts

1 container cool whip

Place the gelatin in a mixing bowl

Place the cream cheese, salt, splenda and vanilla in a larger mixing bowl

Measure the boiling water into a heat resistant measuring cup and pour into the bowl with the gelatin mixture. Stir this thoroughly until the gelatin has dissolves, not less than a minute. Pour the hot mixture over the cream cheese and blend with a wand mixer or hand mixer. You can use your stand mixer, but it isn¡¯t worth the cleanup. Mix the ingredients thoroughly. Taste to make sure it is sweet enough for you.

Now comes the fun. Divide this mixture up as many times as you like. I generally divide it by 3. At this point the total mixture should be around 4 cups. If not, worry, lol.

Flavor each batch with extracts as you wish. For example, make one strawberry, one banana and one rum. You can add food coloring if you like to tell the flavors apart. Usually 1 tsp of extract is enough, but taste each to be sure. When the batches are cool to the touch, divide the cool whip equally amongst the batches, and hand fold this in. At this point you could add nuts, fresh or dried fruits to the mixture. Now spoon into your prepared dessert cups. Refrigerate at least 3 hours. This will last in the refrigerator at least a week if covered. Can be topped with whipped cream, nuts, sprinkles, fruit, whatever you want to dress them up. Guaranteed yummy.
